Ingredients
- 1lb package raw chicken tenders
- 2Tbsp Key West Citrus
- raw sliced almonds
- raw sesame seed
- 2 stalks celery thinly sliced
- 1/2 onion sliced
- 1 green bell pepper sliced
- 1 red bell pepper sliced
- 1 cup chopped pineapple ( canned works, reserve the liquid)
- 1 bunch green onion sliced
- 2 Tbsp Corn Starch mixed in 1/4 cup of water
- soy sauce
- AOOC Garlic OO
- AOOC Coconut BV
- AOOC Persian Lime OO
Directions
- In a bowl combine the chicken tenders with the Persian Lime OO and 2 Tbsp Key West Citrus Basiks Seasoning. Toss and marinate 1 hr.
- Toast almonds and sesame seeds in a pan on medium heat with Butter OO or your favorite #EVOO and set aside
- Sauté chicken in Garlic OO until fully cooked, remove from heat.
- Sauté veggies and pineapple in Persian Lime until tender with crisp edges.
- Add juice of pineapple and 2-4 Tbsp soy sauce
- Add 2-4 Tbsp Coconut Balsamic
- Take slurry of cornstarch with water and add to pan, add chicken back to the mix, thicken over heat 2-3 minutes
- Serve topped with toasted almonds, sesame seeds and green onion
- Serve over rice and enjoy!
Serves 4 people great for lunch the next day!
