Orange Creamsicle Crepes

Ingredients
- Crepes
2 eggs
1 cup milk
1 1/2 tsp AOOC Sweet Valencia Orange Olive Oil, AOOC Mandarin Olive Oil OR AOOC Blood Orange Olive Oil
2/3 cup flour (for gluten free option, use almond flour)
drizzle of AOOC Butter Olive Oil
- Filling
8 oz cream cheese or ricotta cheese
1/4 cup powdered sugar
2-4 Tbsp heavy cream
Directions
- In a blender combine eggs, milk, flour, AOOC Orange Olive Oil of choice, and a dash of salt. Process till smooth.
- Cover and refrigerate for 1 hour.
- Heat skillet over medium high heat and add drizzle of AOOC Butter Olive Oil.
- Pour 1/4 crepe mix into pan, tilting to completely coat the surface of the pan.
- Cook 2-5 minutes, turning once, until golden brown. Repeat with remaining batter.
- Whip all filling ingredients in mixer until smooth and creamy. (If using cream cheese whip this separately first then add other ingredients).
- Spoon about 2 Tbsp of filling in one of the “corners” of the crepe and fold into 1/4s
- Arrange on plate and sprinkle with powdered sugar and mixed berries (optional).
