Blood Orange Olive Oil Cake

2 cups all purpose flour
2 tsp baking powder
1/2 tsp salt
1 tsp cardamom
1 1/2 cups granulated sugar
3 large eggs, room temperature
1 Tbsp blood orange zest, about 1 orange worth
1 cup AOOC Blood Orange Olive Oil
1/2 cup blood orange juice, about 4 oranges
1/2 cup whole milk, room temperature
- Glaze
1 Tbsp blood orange juice, about 1/2 an orange-1 orange
1 cup powdered sugar
Directions
- Preheat oven to 325 and line and grease a loaf pan.
- In a large bowl mix together the orange zest with the sugar with your hands until very fragrant.
- Whisk the eggs into the orange and sugar mixture until fully combined. Then to the same bowl whisk in blood orange juice, milk, and Blood Orange Olive Oil until well combined
- Whisk dry ingredients into the wet mixture until combined.
- Pour batter into your loaf pan and bake for 60-70 minutes, until cake tester comes out clean (or with only a few crumbs. Cool in pan for 10 minutes then transfer to a cooling rack.
- Mix together powdered sugar and blood orange juice to make a smooth glaze. When the cake is cooled to room temperature, poor the glaze evenly over the top.
