Baked Lemon & Dill Salmon

1 lb salmon
1 lemon
2 Tbsp AOOC Wild Fernleaf Dill Olive Oil
1-2 cloves garlic, minced
3 Tbsp fresh chopped dill
Drizzle of AOOC Sicilian Lemon Balsamic
Directions
- Preheat oven to 375
- Line a baking sheet with aluminum foil and drizzle with Wild Fernleaf Dill Olive Oil then add salmon
- Drizzle the salmon with more Fernleaf Dill Olive Oil and rub to coat. Spread minced garlic over salmon and season with salt and pepper and half of the fresh dill. Place thin slices of lemon on the salmon.
- Fold the foil up around the salmon to make a pouch. Place in oven and bake for 15 minutes.
- Remove from oven, unfold the foil and place lemons to the side. Turn oven to broil and return to oven for 3 minutes until it crisps up.
- Remove from oven, top with remaining dill and serve.
