Ingredients

  • 2 cups chopped butternut squash

  • 1 Tbsp AOOC Butternut Squash Seed Oil

  • 1 1/2 Tbsp light brown sugar

  • 1/4 tsp cinnamon

  • 3 turkey sausage links

  • 3 cups chopped kale

  • salt and pepper

  • Optional- drizzle of AOOC Pumpkin Pie Spice for serving

Directions

  • Preheat oven to 375. Cover a baking sheet with tinfoil and set aside.
  • Peel and chop 2 cups of butternut squash and place on the prepared baking sheet.
  • Pour olive oil over the squash and then sprinkle with brown sugar and cinnamon. Mix together to ensure all pieces are evenly coated.
  • Bake for 20 minutes or until fork tender.
  • While butternut squash bakes, cook your turkey sausage in a skillet over medium heat.
  • Add chopped kale to skillet and season with salt and pepper. Cook until kale is tender.
  • Once everything is done cooking combine and gently mix together. Drizzle with Pumpkin Pie Spice Balsamic for extra touch of sweetness. Serve.
