Butternut Squash, Kale & Sausage

2 cups chopped butternut squash
1 Tbsp AOOC Butternut Squash Seed Oil
1 1/2 Tbsp light brown sugar
1/4 tsp cinnamon
3 turkey sausage links
3 cups chopped kale
salt and pepper
Optional- drizzle of AOOC Pumpkin Pie Spice for serving
Directions
- Preheat oven to 375. Cover a baking sheet with tinfoil and set aside.
- Peel and chop 2 cups of butternut squash and place on the prepared baking sheet.
- Pour olive oil over the squash and then sprinkle with brown sugar and cinnamon. Mix together to ensure all pieces are evenly coated.
- Bake for 20 minutes or until fork tender.
- While butternut squash bakes, cook your turkey sausage in a skillet over medium heat.
- Add chopped kale to skillet and season with salt and pepper. Cook until kale is tender.
- Once everything is done cooking combine and gently mix together. Drizzle with Pumpkin Pie Spice Balsamic for extra touch of sweetness. Serve.
