1 lb chicken breast, cut into bite-sized pieces
AOOC Baklouti Green Chili Olive Oil (alternatively you can use Jalapeño Olive Oil or try Cilantro & Onion Olive Oil for less spice)
7 tomatillos
1/2 white onion
2 jalapeños, halved with seeds scooped out (add a few seeds back in if you want it spicier)
2 cloves garlic
1/2 green bell pepper
handful of cilantro
salt & pepper to taste

Directions
- Preheat oven to 375. Add tomatillos, half onion, jalapeños, garlic and bell pepper to a baking sheet.
- Drizzle with AOOC Baklouti Green Chili Olive Oil and sprinkle salt and pepper. Bake for about 20-25 minutes, or until slightly browned.
- While veggies are cooking, heat a skillet over medium high heat with a drizzle of Baklouti Green Chili Olive Oil. Add chicken to pan and cook 5-8 minutes, or until cooked through.
- Remove roasted veggies from the oven and transfer into a blender with 1/2 a cup of water and a handful of cilantro. Blend until smooth then add to chicken skillet.
- Turn skillet heat to low and simmer for 30 minutes until sauce has thickened slightly.
- Serve over rice.
