Ingredients
- 1/2 cup AOOC Butter Olive Oil (or Mild EVOO), plus 2 Tbsps
- 1/2 cup brown sugar, packed
- 2 eggs
- 4 bananas mashed, about 2 cups
- 1 tsp baking soda
- 1 tsp salt
- 1 tsp cinnamon
- 1 tsp vanilla extract
- 1 1/2 cup all-purpose flour
Instructions
- Preheat the oven to 350°F. Generously grease the bottom and sides of a loaf pan with about 2 tablespoons of Butter Olive Oil. (It’s fine if some oil pools at the bottom.)
- In a large bowl, mix the remaining 1/2 cup Butter Olive Oil with 1/2 cup of brown sugar.
- Add the eggs and mix for about 1 minute.
- Smash the bananas then blend them in.
- Stir in 1 teaspoon each of baking soda, kosher salt, cinnamon, and vanilla extract.
- Slowly mix in flour until just combined and no dry spots remain.
- Pour the batter into the prepared loaf pan and bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
