EZPZ Cold Tortellini Salad

minutesThis EZPZ tortellini salad recipe is sure to make your tastebuds happy! It’s the perfect stress-free side that’s easy to throw together and a great side dish to go with your Italian cooking!
Ingredients
Tortellini pasta (about 2 ½ cups)
1 cup Pepperoni (or ham), sliced
1 cup shredded or chopped provolone cheese
¾ cup black olives, halved
2 cups cherry tomatoes, halved
1 cucumber, peeled (optional), sliced, and quartered
1 sliced pepperoncini pepper
salt & pepper to taste
Directions
- Boil water in a large pot of lightly salted water.
- Cook tortellini at a boil, drain.
- Rinse tortellini with cold water until completely cooled, drain and transfer to a large bowl.
- In separate bowl- mix Sicilian Lemon Balsamic and Tuscan Herb Olive Oil and set aside (feel free to double recipe as necessary if you feel like you need more dressing!)
- Stir tortellini pasta, pepperoni (or ham), provolone cheese, black olives, cherry tomatoes, cucumbers, sliced pepperoncini peppers, and Sicilian Lemon and Tuscan Herb dressing.
- Add salt & pepper to taste.
