This EZPZ tortellini salad recipe is sure to make your tastebuds happy! It’s the perfect stress-free side that’s easy to throw together and a great side dish to go with your Italian cooking!

Ingredients

  • Tortellini pasta (about 2 ½ cups)

  • 1 cup AOOC Tuscan Herb Olive Oil

  • ½ cup AOOC Sicilian Lemon Balsamic

  • 1 cup Pepperoni (or ham), sliced

  • 1 cup shredded or chopped provolone cheese

  • ¾ cup black olives, halved

  • 2 cups cherry tomatoes, halved

  • 1 cucumber, peeled (optional), sliced, and quartered

  • 1 sliced pepperoncini pepper

  • salt & pepper to taste

Directions

  • Boil water in a large pot of lightly salted water.
  • Cook tortellini at a boil, drain.
  • Rinse tortellini with cold water until completely cooled, drain and transfer to a large bowl.
  • In separate bowl- mix Sicilian Lemon Balsamic and Tuscan Herb Olive Oil and set aside (feel free to double recipe as necessary if you feel like you need more dressing!)
  • Stir tortellini pasta, pepperoni (or ham), provolone cheese, black olives, cherry tomatoes, cucumbers, sliced pepperoncini peppers, and Sicilian Lemon and Tuscan Herb dressing.
  • Add salt & pepper to taste.
