Ingredients
4 Bone in skin on thighs
2 tbsp AOOC EVOO or AOOC Tuscan Infused Olive Oil
Salt and/or Basiks Seasoning of choice
1-2 Cast Iron Pans, one being smaller or able to fit atop the other
Splash Guard (optional)
Directions
- Preheat Oven to 400℉⠀
- Trim all excess fat and skin from the thighs. Pat dry and salt to dry the chicken as much as possible, the drier the better.
- Heat a cast Iron or oven-proof pan to Med-high on your stove, waiting for the pan to get hot before adding 2-4 tbsp EVOO
- Add chicken to the pan skin side down laying it away to avoid splash back.
- Cook for 8 minutes on the one side, then add a secondary cast iron with a clean bottom to the top of the first pan. Place the whole thing in the oven for about 6-8 more minutes, allowing the chicken to crisp up even more until it reaches an internal temp of 165℉
- Remove from oven and season to taste while the chicken is hot, we really like the Basik’s Chili Lime or Key West Citrus Seasonings.
Notes
