Ingredients

  • 2 1/2 cups old fashioned rolled oats

  • 1/2 cup almonds, chopped

  • 1/3 cup honey

  • 1/4 cup brown sugar, packed

  • 1/4 cup butter (1/2 stick)

  • 2 Tbsp AOOC Sweet Valencia Orange Olive Oil

  • 1/4 tsp salt

  • 1 tsp vanilla extract

  • 1/2 cup dried cranberries, chopped

  • 1/4 cup chocolate chips

  • about 1/4 cup AOOC Peach Balsamic

Directions

  • Preheat oven to 350 degrees. Line a 9 inch square baking dish with parchment paper.
  • Put almonds in a zip lock bag and add Peach Balsamic. Close bag and turn and shake until well coated.
  • Add oats and almonds to baking sheet and mix. Bake for 8-10 minutes until toasted and lightly browned. Remove from oven and transfer to large bowl to cool.
  • In a small saucepan, add honey, butter, Orange Olive Oil and brown sugar. Cook over medium heat until sugar is dissolved and butter has melted.
  • Remove from heat and stir in vanilla extract and salt then pour mixture over oat mixture and stir until combined. Let cool about 10 minutes.
  • Stir in cranberries and chocolate chips until completely mixed. Then press into a square baking dish lined with parchment paper.
  • Cover and chill in refrigerator for at least 2 hours.
  • Remove from pan and cut into bars.
