Ingredients

  • 6-8 fresh peaches (about 1 1/2-2 pounds), peeled, cored & sliced

  • 2 Tbsp AOOC Sweet Valencia Orange Olive Oil

  • 2 Tbsp granulated sugar

  • 2 Tbsp AOOC Peach Balsamic

  • 1 cup all-purpose flour

  • 3/4 cup granulated sugar

  • 1 tsp baking powder

  • 1 tsp ground cinnamon

  • 1/8 tsp ground nutmeg

  • pinch salt

  • 1/2 cup butter (1 stick), melted

  • 1 tsp vanilla extract

Directions

  • Preheat oven to 350˚F. Drizzle a baking dish with Sweet Valencia Orange Olive Oil.
  • Arrange peach slices on the bottom of the dish then drizzle with Peach Balsamic and sprinkle with 2 tablespoons sugar. (*Tip: If the peaches are very soft and juicy, toss them with a tablespoon of cornstarch to help thicken the filling.)
  • In a bowl, whisk together flour, 3/4 cup sugar, baking powder, cinnamon, nutmeg and salt.
  • In a separate bowl, melt butter then mix in the vanilla.
  • Pour butter mixture over flour mixture and stir until combined and batter is moist, resembling a cookie dough like texture.
  • Using your hands, sprinkle the batter over the peaches.
  • Bake for 25-30 minutes, or until top is browned and bubbly. Remove from oven and let it rest at room temperature for 15 minutes.
  • Best served warm with ice cream!
