EZPZ Walnut Pesto Shrimp

- For Pesto
zest of ½ lemon
juice of ½ lemon
2 ½ Tbsp AOOC Extra Virgin Olive Oil of choice
1 ½ Tbsp AOOC Garlic Fused Olive Oil
¼ cup walnuts
1 green onion
½ cup fresh basil
double pinch of salt
- For Shrimp
1 lb large shrimp
3 Tbsp AOOC Garlic Fused Olive Oil
Directions
- Combine pesto ingredients in processor of choice. Blend till walnuts are coarsely chopped.
- Marinate shrimp in 1 tablespoon Garlic Olive Oil.
- Heat 2 tablespoons of Garlic Olive Oil in skillet to medium/high. Add shrimp. Allow to lightly brown on one side before turning. (It will pop off the surface easily when ready. Be patient.)
- *Could add a bit of white wine for a rich sauce over rice OR Toss in prepared walnut pesto and linguine pasta OR Plate shrimp single layer and dollop with pesto to serve as appetizers!
