Garlic Chicken Primavera

2 Chicken breasts
1 1/2- 2 cups Penne pasta
1 Tbsp AOOC Tuscan Herb Olive Oil
1 Tbsp AOOC Garlic Olive Oil
1-2 chopped garlic cloves
1 cup cherry tomatoes, halved
1 cup chopped spinach
1-2 yellow peppers
1-2 yellow squash
1 cup Parmesan cheese
AOOC Sicilian Lemon Balsamic (optional)
salt & pepper
Directions
- Cut chicken breast into cubes and season with salt and pepper.
- In a large pot, heat Tuscan Herb Olive Oil, add chicken and chopped garlic cloves- cook until no pink is showing.
- In separate pot boil some penne pasta (add a pinch of salt to water and splash of Garlic Olive Oil so the pasta doesn’t stick).
- Once chicken is cooked add cherry tomatoes, chopped spinach, yellow peppers, yellow squash, and cook for about 2 minutes.
- Add a cup of parmesan cheese and pasta.
- Stir until cheese is melted and evenly distributed.
- *optional- drizzle a little Sicilian Lemon White Balsamic before serving.
Notes
- You can also try other vegetable combinations with this recipe: mushrooms, sweet potatoes, or asparagus!
