Chipotle Chicken Kebabs

Ingredients
- Kabobs
1 pound chicken breast
2 Tbsp honey
1 pineapple (cut into 1 inch pieces)
2 bell peppers (I used red and green)
1 red onion
2 Tbsp AOOC Chipotle Olive Oil
Skewers
- Marinade
⅜ cup AOOC Chipotle Olive Oil
⅛ cup AOOC Pineapple Balsamic
garlic (1-2 cloves)
2 tsp cumin
½ Tbsp corriander
1 tsp chili powder
½ tsp dried oregano
½ tsp salt
Directions
- Combine all marinade ingredients into a food processor and blend.
- Dice chicken, bell peppers, onion and pineapple into 1 inch cubes and marinate in freezer bags for 30 minutes (to 24 hours).
- Heat grill to medium high.
- Skewer chicken, bell pepper, onion, and pineapple onto skewers. Brush kebabs with Chipotle Olive Oil (or an extra virgin for less heat).
- Grill. Turn every 4-5 minutes to grill evenly. Remove from heat when internal temperature reaches 165℉.
- Serve with our Lime Cilantro Rice!
Notes
- If using wood skewers. soak for at least 30 minutes before grilling.
- Brush more marinade on kebabs halfway through for even more flavor!
