Ingredients
For the Muffins:
- ¾ cup milk
- ¼ cup water
- 2 tsp instant coffee
- ½ cup cocoa powder
- ½ cup chocolate chunks
- 1 stick of butter
- 2 cups all purpose flour
- 1 Tbsp baking powder
- ¼ tsp salt
- ½ cup packed brown sugar
- ½ cup granulated sugar
- ¼ cup AOOC Butter Olive Oil (or a mild intensity EVOO)
- 2 eggs, room temperature
- 1 tsp vanilla extract
- ⅓ cup chocolate chunks, for topping
For the Filling:
- ½ cup heavy cream
- 1 cup chocolate chunks
- Pinch of salt
Instructions
- Prepare the Muffin Batter:
- Preheat your oven to 375°F (190°C). Grease a muffin tin with butter or a light coat of AOOC Olive Oil.
- In a small saucepan, combine the milk, water, and instant coffee. Heat the mixture over medium heat until it begins to simmer.
- Whisk in the cocoa powder until smooth, then add the butter and ½ cup of chocolate chunks. Stir until everything is fully melted and smooth.
- Transfer the melted chocolate mixture to a large mixing bowl and let it cool slightly. - Combine Wet and Dry Ingredients:
- In a separate bowl, whisk together the flour, baking powder, and salt.
- To the bowl with the cooled chocolate mixture, add the brown sugar, granulated sugar, AOOC Olive Oil, eggs, and vanilla extract. Stir until well combined.
- Gradually fold the flour mixture into the wet ingredients, using a folding spatula. Mix until just combined—be careful not to overmix, as this can make the muffins dense.
- Gently fold in the ⅓ cup of chocolate chunks. - Bake the Muffins:
- Evenly distribute the batter into the prepared muffin tin, filling each cup about ¾ full. Sprinkle the tops of the muffins with additional chocolate chunks for extra decadence.
- Bake in the preheated oven for 20-24 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Baking times may vary, so keep an eye on them! - Prepare the Ganache Filling:
- While the muffins are baking, make the ganache. In a small saucepan over medium heat, combine the heavy cream, chocolate chunks, and a pinch of salt. (Alternatively, you can make the ganache in the microwave: heat the heavy cream for 30 seconds to 1 minute until steaming, then stir in the chocolate chunks and salt. Using an immersion blender can help to achieve a smooth, well-combined filling.)
- Stir until the chocolate is fully melted and the mixture is smooth.
- Remove the ganache from the heat and let it cool slightly until it thickens but is still pourable. - Fill the Muffins:
- Once the muffins have cooled slightly, use a piping bag filled with the ganache to carefully fill the center of each muffin. Insert the tip of the piping bag into the top of the muffin and squeeze gently until you feel resistance. - Serve and Enjoy:
- Enjoy these rich and indulgent chocolate muffins while they’re still warm for the ultimate treat! They’re perfect for any time you’re craving a sweet, chocolatey snack.
