Ingredients
2 fresh peaches, diced
2-4 Tbsp AOOC Peach Balsamic
3/4 cup granulated sugar
2 eggs
1 cup milk
1 tsp vanilla
1 Tbsp baking powder
1/2 tsp salt
1/8 tsp ground nutmeg, scant
3 cups quick oats
3 Tbsp brown sugar
about 1/4 tsp cinnamon
Directions
- Preheat oven to 350 degrees.
- Peel and dice your peaches and put them into a small bowl. Top with Peach Balsamic and gently stir to ensure all pieces are coated evenly. Set aside.
- In a separate, medium-sized bowl add granulated sugar and Sweet Valencia Orange Olive Oil and mix will.
- Beat in 2 eggs, then add milk, vanilla, baking powder, salt and nutmeg. Stir until blended.
- Add oats to bowl and mix. Finally, add peaches and stir until evenly distributed.
- Drizzle a 9×13 baking dish with Sweet Valencia Orange Olive Oil then pour oatmeal mixture into prepared dish.
- Sprinkle top with brown sugar then cinnamon.
- (You can now bake immediately or refrigerate overnight) Bake at 350 for 35 minutes.
- Best served with heavy cream, half and half, milk or a scoop of greek yogurt!
Also try with a drizzle of Peach Balsamic, honey or maple syrup over top for extra sweetness!
