Slow Cooker Pumpkin Pie Oatmeal

Ingredients

  • 1 Tbsp AOOC Roasted Pumpkin Seed Oil

  • 1 cup steel-cut oats

  • 2 1/2 cups water

  • 1 1/2 cups almond milk (I used unsweetened)

  • 1 cup pumpkin (canned or fresh)

  • 3 Tbsp maple syrup

  • 1 tsp vanilla

  • 1 tsp AOOC Pumpkin Pie Spice Balsamic

  • 1/2 tsp cinnamon

  • 1/4 tsp salt

  • Optional- chopped pecans, maple syrup or almond milk for serving

Directions

  • Coat your slow cooker with Roasted Pumpkin Seed Oil.
  • Add all your ingredients to your slow cooker and mix well.
  • Cook on low for 6-8 hours.
  • In the morning, give the oats a good stir, making sure to get any that settled on the bottom. Portion into a bowl and serve with toppings of your choice.
  • Leftovers can be stored in a sealed container int he fridge for up to a week.

Notes

  • ONLY use steel cut oats for this recipe. Rolled oats or quick oats do not work.
