Slow Cooker Pumpkin Pie Oatmeal

1 Tbsp AOOC Roasted Pumpkin Seed Oil
1 cup steel-cut oats
2 1/2 cups water
1 1/2 cups almond milk (I used unsweetened)
1 cup pumpkin (canned or fresh)
3 Tbsp maple syrup
1 tsp vanilla
1 tsp AOOC Pumpkin Pie Spice Balsamic
1/2 tsp cinnamon
1/4 tsp salt
Optional- chopped pecans, maple syrup or almond milk for serving
Directions
- Coat your slow cooker with Roasted Pumpkin Seed Oil.
- Add all your ingredients to your slow cooker and mix well.
- Cook on low for 6-8 hours.
- In the morning, give the oats a good stir, making sure to get any that settled on the bottom. Portion into a bowl and serve with toppings of your choice.
- Leftovers can be stored in a sealed container int he fridge for up to a week.
Notes
- ONLY use steel cut oats for this recipe. Rolled oats or quick oats do not work.
