minutesThis EZPZ quinoa recipe is sure to become a new staple in your diet! It’s easy to adjust and customize to your own taste preferences. Plus, you can throw it in the oven for an hour and a half and not even have to worry about it!
Ingredients
2 cups quinoa
3 cups water
1-2 yellow squash
1-2 zucchini
1 medium sweet onion
2 cloves garlic, minced
2 Tbsp AOOC Extra Virgin Olive Oil (of your choice)
2 Tbsp AOOC Basil Olive Oil
*optional kick* 2 Tbsp AOOC Cayenne Olive Oil
1 tsp lime juice
Directions
- Preheat oven to 350 degrees. In an oven safe dish add 3 cups of water and 2 tablespoons AOOC EVOO.
- Add quinoa and minced garlic. Stir ingredients, cover, and bake for 90 minutes. (no attention required)
- Around the last 15 minutes of cooking the quinoa, wash and dice your squash, zucchini, and onion.
- Heat pan to medium heat then add AOOC Basil Olive Oil (or your Cayenne Olive Oil and a teaspoon of lime juice for that extra kick!)
- Add in diced vegetables and cook till tender, about 10-15 min.
- Mix together and finish with your favorite AOOC oil!
