Avocado & Egg Truffle Toast

2 slices whole wheat bread
2 Eggs (local organic were used for this recipe)
1 avocado
AOOC extra virgin olive oil of your choice
salt & pepper to taste
Directions
- Cut avocado in half and then in slices.
- Heat up EVOO in pan on stove.
- While frying eggs, put bread in toaster.
- When toast is done drizzle with AOOC White Truffle Oil.
- Arrange avocado slices on each piece of toast.
- Place egg on top of avocado slices.
- Season with salt & pepper (and more truffle oil if desired)
