Blueberry Lemon Iced Tea

4 cups water, semi-boiled
6 green tea bags (I used Bigelow Green Tea with Lemon)
about 1/3 lb fresh blueberries
1 cup water
¼ cup fresh lemon juice
1 Tbsp AOOC Blueberry Balsamic
1 Tbsp honey (or more if you would like it sweeter)
Directions
- In a large tea pot of sauce pan heat 4 cups of water to just before a boil. If water boils just let it cool off for a minute before continuing
- Add teabags to a covered tea pot or covered saucepan and let steep for 3 minutes. Remove and discard teabags. Do not squeeze teabags when removing. Let tea cool.
- While tea is steeping, add blueberries, lemon juice, and 1 cup of water to a medium sauce pan and bring to a boil. Once boiling reduce heat to medium and simmer for about 8 minutes. Remove from heat.
- Place a sieve over a large bowl and pour the blueberry mixture into the sieve. Discard blueberries.
- Add 1 tablespoon of honey and 1 tablespoon of Blueberry Balsamic and stir till well mixed into the blueberry juice. (add more honey if you desire a sweeter taste)
- Pour cool steeped tea into a large pitcher and add 1 1/2 cups of blueberry juice mixture. Refrigerate for 1 hour to cool liquid completely.
- Serve Blueberry Lemon Iced Tea in a glass over ice and garnish with lemon wedges and fresh blueberries.
