Devil’s Food Cake (with Olive Oil)

Ingredients

  • 3 cups flour

  • 2 cups sugar

  • 6 Tbsp cocoa (natural)

  • 2 tsp baking soda

  • ½ tsp salt

  • ¾ cup AOOC Extra Virgin Olive Oil of choice (mild intensity is best)

  • 2 Tbsp white vinegar

  • 1 Tbsp vanilla extract

  • 2 cups cold water

Directions

  • Preheat the oven to 350.
  • In a large mixing bowl sift together the flour, sugar, cocoa, baking soda and salt. 
  • With mixer on low speed, pour in the oil, vinegar, vanilla, and water; beat until smooth. Pour the mixture into two greased and floured  9″ pans (or in one 13x9x2-inch pan).
  • Bake for 30 minutes (40 for large cake), or until a toothpick inserted in center of  cake comes out clean.
  • Put the cake pans on racks and cool for 15 minutes before removing the cakes from the pans to cool completely.
  • Dust with powdered sugar.
