Creamy Harissa Ravioli

1 container of cheese raviolis
2 Tbsp AOOC Harissa Olive Oil
1-2 Tbsp tomato paste
1/2 cup coconut cream
1/2 tsp cumin
1/2 tsp paprika
1 clove garlic, minced
1/2 cup mini peppers, sliced
salt and pepper to taste
Directions
- Cook ravioli according to package instructions
- Meanwhile, add drizzle of Harissa Olive Oil to a skillet over medium heat. Add peppers and cook about 5 minutes.
- Add garlic and let cook another 40 seconds to a minute, stirring frequently.
- Add seasonings then add tomato paste and 2 tablespoons Harissa Olive Oil
- Whisk in the coconut cream and reduce heat to medium low.
- Let cook for 5-6 minutes, stirring frequently. Sauce should be smooth and creamy. Taste and add more seasonings as needed.
- Toss raviolis in sauce. Top with fresh chopped parsley if desired.
