Creamy Harissa Ravioli

Ingredients

  • 1 container of cheese raviolis

  • 2 Tbsp AOOC Harissa Olive Oil

  • 1-2 Tbsp tomato paste

  • 1/2 cup coconut cream

  • 1/2 tsp cumin

  • 1/2 tsp paprika

  • 1 clove garlic, minced

  • 1/2 cup mini peppers, sliced

  • salt and pepper to taste

Directions

  • Cook ravioli according to package instructions
  • Meanwhile, add drizzle of Harissa Olive Oil to a skillet over medium heat. Add peppers and cook about 5 minutes.
  • Add garlic and let cook another 40 seconds to a minute, stirring frequently.
  • Add seasonings then add tomato paste and 2 tablespoons Harissa Olive Oil
  • Whisk in the coconut cream and reduce heat to medium low.
  • Let cook for 5-6 minutes, stirring frequently. Sauce should be smooth and creamy. Taste and add more seasonings as needed.
  • Toss raviolis in sauce. Top with fresh chopped parsley if desired.
