Devil’s Food Cake (with Olive Oil)

3 cups flour
2 cups sugar
6 Tbsp cocoa (natural)
2 tsp baking soda
½ tsp salt
¾ cup AOOC Extra Virgin Olive Oil of choice (mild intensity is best)
2 Tbsp white vinegar
1 Tbsp vanilla extract
2 cups cold water
Directions
- Preheat the oven to 350.
- In a large mixing bowl sift together the flour, sugar, cocoa, baking soda and salt.
- With mixer on low speed, pour in the oil, vinegar, vanilla, and water; beat until smooth. Pour the mixture into two greased and floured 9″ pans (or in one 13x9x2-inch pan).
- Bake for 30 minutes (40 for large cake), or until a toothpick inserted in center of cake comes out clean.
- Put the cake pans on racks and cool for 15 minutes before removing the cakes from the pans to cool completely.
- Dust with powdered sugar.
