Ingredients
- 1/3 cup burghul or cracked wheat
- 1 cup boiling water
- 2 large tomatoes, finely chopped
- 1/4 cup lemon juice
- 4 cups chopped fresh flat-leaf parsley leaves
- 1 cup chopped fresh mint leaves
- 4 green onions, thinly sliced
- 1/4 cup Abingdon Olive Oil Company Wild Fernleaf Dill Infused Olive Oil
Directions
- Place burghul in a bowl. Pour 1 cup boiling water over burghul . Let sit for 30minutes or until all water is absorbed.
- Fluff burghul with a fork and add finely chopped tomatoes, lemon juice fresh mint leaves and green onions. Add parsley, mint, onion
