Harissa Chicken Salad

2 Chicken thighs
2 heads of romaine, chopped
1/4 cup shredded carrots
1/3 cup crumbled feta
2 cucumbers, sliced
3-4 mini peppers, sliced
2 Tbsp toasted pinenuts
1 avocado, sliced or cut into chunks
AOOC Harissa Olive Oil
AOOC Balsamic- Mango, Apricot, or Serrano Honey
- Dressing
1/4 cup plain greek yogurt
4 Tbsp AOOC Harissa Olive Oil
2 Tbsp AOOC Balsamic- Mango, Apricot, or Serrano Honey
1/2 tsp minced garlic
salt and pepper to taste
Directions
- Make your dressing by combining all the ingredients in a food processor or blender. Blend until combined. Taste and add more seasoning, garlic or balsamic if needed.
- Marinate your chicken thighs in Harissa Olive Oil and Balsamic of your choice, as well as seasonings of your choice. Cook chicken thighs, then cut into thin slices or shred.
- Assemble the salads by combining all the ingredients. Drizzle with desired amount of dressing.
- Enjoy!
