Ingredients

  • 2 Chicken thighs

  • 2 heads of romaine, chopped

  • 1/4 cup shredded carrots

  • 1/3 cup crumbled feta

  • 2 cucumbers, sliced

  • 3-4 mini peppers, sliced

  • 2 Tbsp toasted pinenuts

  • 1 avocado, sliced or cut into chunks

  • AOOC Harissa Olive Oil

  • AOOC Balsamic- Mango, Apricot, or Serrano Honey

  • Dressing
  • 1/4 cup plain greek yogurt

  • 4 Tbsp AOOC Harissa Olive Oil

  • 2 Tbsp AOOC Balsamic- Mango, Apricot, or Serrano Honey

  • 1/2 tsp minced garlic

  • salt and pepper to taste

Directions

  • Make your dressing by combining all the ingredients in a food processor or blender. Blend until combined. Taste and add more seasoning, garlic or balsamic if needed.
  • Marinate your chicken thighs in Harissa Olive Oil and Balsamic of your choice, as well as seasonings of your choice. Cook chicken thighs, then cut into thin slices or shred.
  • Assemble the salads by combining all the ingredients. Drizzle with desired amount of dressing.
  • Enjoy!
