Kale Waldorf Salad

Ingredients

  • 4 cups chopped kale

  • 1 cucumber, chopped

  • 1/3 cup raisins

  • 1/2 cup walnut, chopped

  • 1-2 Granny Smith apples, chopped into bite sized pieces

  • Dressing
  • 4 Tbsp AOOC Walnut Oil

  • 2 Tbsp AOOC Gravenstein Apple Balsamic

  • 2 Tbsp dijon mustard

  • 1-2 Tbsp water (to thin out a little)

Directions

  • Tear kale into small pieces, place in large salad bowl, and massage it with your hands until it becomes a brighter green color (about 3 min). Add in chopped cucumber and apple.
  • In a separate bowl, combine dressing ingredients. Mix thoroughly, pour over kale, cucumber and apples, and toss.
  • Add in walnuts and raisins.
  • Serve immediately or store in refrigerator for a few hours (or overnight) before serving.
