Kale Waldorf Salad

4 cups chopped kale
1 cucumber, chopped
1/3 cup raisins
1/2 cup walnut, chopped
1-2 Granny Smith apples, chopped into bite sized pieces
- Dressing
4 Tbsp AOOC Walnut Oil
2 Tbsp AOOC Gravenstein Apple Balsamic
2 Tbsp dijon mustard
1-2 Tbsp water (to thin out a little)
Directions
- Tear kale into small pieces, place in large salad bowl, and massage it with your hands until it becomes a brighter green color (about 3 min). Add in chopped cucumber and apple.
- In a separate bowl, combine dressing ingredients. Mix thoroughly, pour over kale, cucumber and apples, and toss.
- Add in walnuts and raisins.
- Serve immediately or store in refrigerator for a few hours (or overnight) before serving.
