1/2 cup chicken stock
3 Tbsp AOOC Sicilian Lemon Balsamic
2 Tbsp AOOC Milanese Gremolata Olive Oil
1 Tbsp lemon zest
2 cloves garlic, minced
2 tsp dijon mustard
1 tsp dried oregano
1/2 tsp dried thyme
salt and pepper to taste
2 pounds boneless, skinless chicken thighs
Directions
- In a medium bowl, combine chicken stock, Sicilian Lemon Balsamic, Milanese Gremolata Olive Oil, lemon zest, garlic, dijon, oregano, thyme, salt and pepper.
- In a gallon plastic bag or large bowl, combine chicken and chicken stock mixture, marinate for at least 2 hours to overnight. Drain chicken from marinade.
- Heat a drizzle of Milanese Gremolata Olive Oil in a cast iron skillet over medium high heat. Add chicken to pan and cook until golden brown and cooked through.
- Serve!
