Mexican Street Corn Salad

Ingredients

  • 2 bags frozen corn

  • 1/2 cup green onions, chopped

  • 2 Tbsp AOOC Key Lime Balsamic

  • 4 Tbsp AOOC Baklouti Green Chili Olive Oil

  • 1/2 cup queso fresco cheese

  • Basik’s Chili Lime Seasoning Blend

  • cilantro

Directions

  • Preheat oven to 425.
  • Pour bags of frozen corn onto a baking sheet in single layer. Drizzle with Baklouti Olive Oil
  • Roast in oven for 20 minutes or until some kernels start to brown.
  • Once corn cooks and cools, place in large serving bowl and toss with green onions, oil, vinegar and Basik’s Chili Lime Seasoning.
  • Top with crumbled queso fresco and garnish with extra Chili Lime Seasoning and some cilantro (optional).
