Ingredients

  • 4 Tbsp AOOC Pomegranate Quince Balsamic

  • 1/4 cup pomegranate juice

  • 1 Tbsp soy sauce

  • 1 garlic clove

  • 4 salmon filets

Directions

  • Pre-heat oven to 400.
  • In a large bowl, pour the balsamic, pomegranate juice, soy sauce and the garlic. Mix everything well.
  • Add salmon to bowl and cover with foil or plastic wrap and let marinate for 15 minutes.
  • Place salmon (skin side down) on a parchment-lined baking sheet and bake it for 7 minutes.
  • Meanwhile, pour marinade into a small saucepan over medium-high heat. Bring to a boil and boil for 3-5 minutes, until thick and syrupy.
  • Remove the salmon from the oven and pour half the reduced marinade over the salmon.
  • Return to oven and bake for 5-7 more minutes or until salmon is cooked through.
  • Transfer salmon to plates and pour remaining marinade sauce over the salmon. Best served with rice, salad, and/or roasted veggies.
