Rosemary and Grapefruit Balsamic Mocktail

One of the Happy Hearts Kitchen’s favorite balsamic for adding to water, fruit, salads, and sparkling beverages has to be the Abingdon Olive Oil Company’s Grapefruit White Balsamic Vinegar. This balsamic always adds a wonderful touch of sweetness and citrus to any dish, but with this Rosemary and Grapefruit BV cocktail recipe it is sure to impress for #Thirstythursday !

Rosemary Simple Syrup

  • 1 cup water
  • 1 cup granulated sugar
  • 3 sprigs of rosemary

Cocktail per 4 glasses

  • 1 1/2 cups fresh pink grapefruit juice
  • 2 Tbs AOOC Grapefruit BV
  • ¼ cup of the rosemary simple syrup
  • 4 cups sparkling water 

Directions

  1. Rosemary Simple Syrup: In a small sauce pan on the stove, add 1 cup of water and 1 cup of granulated sugar over medium heat.
  2. Dissolve the sugar for about 5 minutes. Do not let the mixture boil or crystals will form.
  3. Once the sugar has dissolved, pour the simple syrup into a heat safe container.
  4. Add 3 sprigs of rosemary and let steep for at least one hour. The syrup will keep in the refrigerator for ten days.
  5. Mocktail per glass: Add 3/8 cup fresh pink grapefruit into a serving glass.
  6. Add 1 Tbs (1/2 oz) of rosemary simple syrup, and ½ tbs grapefruit balsamic. Stir.
  7. Fill the remainder of the glass with sparkling water (about 1 cup).
  8. Garnish with rosemary sprig

Served best chilled!
