Ingredients

  • 3 peaches, semi-ripe and halved

  • 1 small zucchini, cut in strands with vegetable peeler

  • 2 cups arugula

  • 1/2 cup raspberries

  • 2 Tbsp pinenuts

  • 2 Tbsp AOOC Serrano Honey Balsamic

  • 3 Tbsp AOOC Harissa Olive Oil

  • 1 Tbsp lemon juice

Directions

  • Heat the grill over high heat
  • Halve the peaches and remove the pit
  • Combine olive oil and balsamic in a small bowl, and mix. Brush over halved peaches
  • Add lemon juice to olive oil and balsamic mix, set aside.
  • Once grill is hot, add the peaches cut side down and grill for about 5 minutes. Remove from grill.
  • To serve- add arugula, zucchini and peaches to platter. Garnish with raspberries and pinenuts. Drizzle with dressing.
