Grilled Peaches

3 peaches, semi-ripe and halved
1 small zucchini, cut in strands with vegetable peeler
2 cups arugula
1/2 cup raspberries
2 Tbsp pinenuts
2 Tbsp AOOC Serrano Honey Balsamic
3 Tbsp AOOC Harissa Olive Oil
1 Tbsp lemon juice
Directions
- Heat the grill over high heat
- Halve the peaches and remove the pit
- Combine olive oil and balsamic in a small bowl, and mix. Brush over halved peaches
- Add lemon juice to olive oil and balsamic mix, set aside.
- Once grill is hot, add the peaches cut side down and grill for about 5 minutes. Remove from grill.
- To serve- add arugula, zucchini and peaches to platter. Garnish with raspberries and pinenuts. Drizzle with dressing.
