Shrimp & Veggie Pasta (Meal Prep)

4-5 cups rotini pasta
1 lb cooked shrimp
3-4 cups brussel sprouts
1 15 oz. can of corn
1 15 oz can of sweet peas
* frozen corn and peas can be used instead of canned if desired
Directions
- Pre-Heat the oven to 425
- Quarter brussels sprouts, toss with AOOC Tuscan Herb OO and garlic powder. Bake for 12-15 minutes.
- Cook Pasta according to box instructions, boiling until al dente
- Thaw pre-cooked shrimp then saute in Tuscan Herb. Cook the corn/peas according to bag or can and add to the shrimp.
- Mix all ingredients together and toss with olive oil and balsamic to taste or prepare some ahead of time in a small to go ramekin.
- Add salt/pepper to taste
