1 cup AOOC Mushroom & Sage Olive Oil (or traditional EVOO)
3 Tbsp Sugar
2 Tbsp Pepper (½ white, ½ black)
2 Tbsp Salt (less than 1 T fine sea salt)
1 tsp Nutmeg – fresh ground
pinch cloves
1 Tbsp finely crushed basil
1 Tbsp finely crushed parsley
1 Tbsp smoked paprika
Directions

- Mix other ingredients in a measuring cup. It will be gooey and green.
- Put turkey in brown grocery store bag. To prep for future closure, cinch in the open end and adjust so the inside of the bag doesn’t touch the turkey. (It helps to moisten around the cinched part with water to soften the bag.)
- -OR- if stapling shut, fold down once checking to be sure inside of bag doesn’t touch the turkey.
- Open bag. Pour gooey green mixture over all turkey inside bag.
- Sprinkle with paprika generously until red all over.
Secure shut with twisty ties, twine, string or staples. - Bake 325º as directed for unstuffed bird.
- Once done, open bag to maintain crisp skin. Let stand for 15-20 minutes before carving.
