Sweet & Spicy Chicken Bowls

- Spicy Honey Chicken
1 pound boneless skinless chicken breasts or thighs – sliced through the middle to 1 inch thick
4 Tbsp AOOC Harissa Olive Oil
¼ cup honey
2 tsp AOOC Balsamic (we suggest Umeboshi Plum, Apricot, Mango or Serrano Honey Balsamic)
2 garlic cloves crushed
½ tsp cayenne pepper
1 tsp ground cumin
salt and pepper to taste
- Bowls
2 cups black lentils
1/2 cup chopped tomatoes
1/2 cup chopped cucumbers
½ cup pickled onions
½ cup feta cheese crumbles
¼ cup tzatziki sauce
¼ cup hummus
Directions
- Add the honey, Harissa Olive Oil, Balsamic, garlic and cayenne to a small sauce pan over medium high heat.
- Stir until sauce is thickened and warmed then set aside.
- Season chicken with cumin, salt and pepper. Then add another drizzle of Harissa Olive Oil to a large cast iron skillet over medium high heat and cook chicken 5-6 minutes per side or until cooked through.
- Brush harissa honey glaze over the chicken and continue cooking for 2 more minutes. Remove chicken from heat and let rest while preparing bowls.
- Divide the lentils, tomatoes, cucumbers and pickled onions between the bowls then dice the chicken and divide between the bowls.
- Top with tzatziki sauce, hummus and feta. Add an extra drizzle of Harissa Olive Oil and Balsamic for added flavor!
