Sweet & Spicy Chicken Bowls

Ingredients

  • Spicy Honey Chicken
  • 1 pound boneless skinless chicken breasts or thighs – sliced through the middle to 1 inch thick

  • 4 Tbsp AOOC Harissa Olive Oil

  • ¼ cup honey

  • 2 tsp AOOC Balsamic (we suggest Umeboshi Plum, Apricot, Mango or Serrano Honey Balsamic)

  • 2 garlic cloves crushed

  • ½ tsp cayenne pepper

  • 1 tsp ground cumin

  • salt and pepper to taste

  • 2 cups black lentils

  • 1/2 cup chopped tomatoes

  • 1/2 cup chopped cucumbers

  • ½ cup pickled onions

  • ½ cup feta cheese crumbles

  • ¼ cup tzatziki sauce

  • ¼ cup hummus

Directions

  • Add the honey, Harissa Olive Oil, Balsamic, garlic and cayenne to a small sauce pan over medium high heat.
  • Stir until sauce is thickened and warmed then set aside.
  • Season chicken with cumin, salt and pepper. Then add another drizzle of Harissa Olive Oil to a large cast iron skillet over medium high heat and cook chicken 5-6 minutes per side or until cooked through.
  • Brush harissa honey glaze over the chicken and continue cooking for 2 more minutes. Remove chicken from heat and let rest while preparing bowls.
  • Divide the lentils, tomatoes, cucumbers and pickled onions between the bowls then dice the chicken and divide between the bowls.
  • Top with tzatziki sauce, hummus and feta. Add an extra drizzle of Harissa Olive Oil and Balsamic for added flavor!
