Chicken Sausage & Couscous Tomato Soup

minutesAfter a long day at work, cooking was the last thing I felt like doing. But this recipe was my lifesaver. I only had to dirty my cutting board and one pot, and I had a substantial soup that actually left me feeling full!
Ingredients
1 roma tomato
1 yellow onion
2 cloves garlic
1 lb Italian chicken sausage
dried oregano (about 1/2 tablespoon or so)
2 Tbsp tomato paste
1/2 cup Israeli Couscous
2 tsp chicken stock concentrate
Shredded Parmesan cheese
1 Tbsp AOOC Traditional 18-Year Barrel Aged Balsamic OR AOOC Espresso Balsamic
salt and pepper
Directions
- Wash and dry all produce. Halve, peel, and finely chop onion until you have 3/4 cup (use the rest how you would like).
- Peel and finely chop garlic. Medium dice tomatoes.
- Heat a large pot to medium high heat and add a drizzle of Tuscan Herb Olive Oil. Add onion, cook till softened.
- Add sausage, garlic, and oregano. Cook, breaking up meat pieces, till browned and cooked through (4-5 min).
- Add diced tomatoes and tomato paste to pot. Cook 2-3 minutes until tomato is slightly broken down. Add a drizzle or 2 more of Tuscan Herb.
- Stir in 2 1/2 cups water, stock concentrate, and salt and pepper. *optional* add 1 tablespoon of AOOC Espresso Balsamic for extra flavor!
- Bring soup to boil then stir in couscous. Cook stirring often, about 8-10 minutes. Taste, season with salt and pepper.
- Divide soup between bowls and sprinkle with parmesan.
