3 cups cooked chicken, chopped and chilled (I used leftover rotisserie chicken)
2/3 cup plain Greek yogurt
1 Tbsp dijon mustard
juice of 1/2 lemon
1/3 cup green onion, chopped
3/4 cup seedless cucumber, peeled and chopped
1/2 cup celery, chopped
1/4 cup fresh parsley, chopped
1 tsp dill (dried or fresh)
1 tsp salt
1/4 tsp pepper
1 tsp paprika
Directions
- Chop up chicken, green onions, cucumber, celery and parsley.
- Combine all ingredients together in a large bowl and stir until completely mixed together.
- Serve on crackers, rolls, bread or in a wrap!
- Store leftovers in an airtight container in the refrigerator.
