Ingredients

  • 3 cups cooked chicken, chopped and chilled (I used leftover rotisserie chicken)

  • 2/3 cup plain Greek yogurt

  • 1 Tbsp AOOC Wild Fernleaf Dill Olive Oil

  • 1 tsp AOOC Suyo Cucumber Balsamic

  • 1 Tbsp dijon mustard

  • juice of 1/2 lemon

  • 1/3 cup green onion, chopped

  • 3/4 cup seedless cucumber, peeled and chopped

  • 1/2 cup celery, chopped

  • 1/4 cup fresh parsley, chopped

  • 1 tsp dill (dried or fresh)

  • 1 tsp salt

  • 1/4 tsp pepper

  • 1 tsp paprika

Directions

  • Chop up chicken, green onions, cucumber, celery and parsley.
  • Combine all ingredients together in a large bowl and stir until completely mixed together.
  • Serve on crackers, rolls, bread or in a wrap!
  • Store leftovers in an airtight container in the refrigerator.
