EZPZ Black Beans & Rice Bowls

Try this EZPZ 30 minute recipe with any combination of veggies or meat you would like! This recipe uses rice, black beans, corn, and chicken. Other ingredients you could try include: steak, peppers, jalapeños, other types of beans, avocado, cheese…. the combinations are endless!

Try this recipe with a few of our AOOC oils! (We have provided a mild, medium, and hot option below!)

Ingredients

Directions

  • Heat large pan to medium high heat. Add drizzle of AOOC Olive Oil.
  • Add chopped onions, cooking till softened (about 3 minutes)
  • Add rice, stirring and cooking till rice is golden brown, 5 minutes.
  • Add garlic, sauté for 1 minute.
  • Pour in water/broth, add beans, and salt and pepper. Bring to boil.
  • Turn heat to low and cover, simmer rice for 25 minutes, stirring occasionally.
  • Add 2 teaspoons Basik’s Taco Seasoning to rice and 2-3 teaspoons to chicken.
  • Cook and shred chicken, as desired. (I cooked mine in my air fryer at 360 for about 15-20 minutes with AOOC Chipotle)
  • About 10 minutes before rice is done, stir in corn and cooked chicken.
  • Top with your desired toppings and serve! (I also added an extra drizzle of Chipotle Olive Oil on top for a little more flavor!)
