Spicy Baklouti Coleslaw

- Coleslaw Mix (use a store bought mix or make your own using the ingredients below)
5 cups cabbage (I used half red and half green)
1 cup shredded carrots
3 green onions, chopped
1 1/2 cups cucumber, shredded or diced (use seedless or try to remove as many seeds as possible)
- Dressing
1/2 cup AOOC Baklouti Green Chili Olive Oil
1/4 cup AOOC Pomegranate Quince Balsamic
1 tsp lemon juice
2 Tbsp granulated sugar
3/4 tsp salt
1/2 tsp black pepper
1 1/2 Tbsp horseradish
2 Tbsp sour cream
1 1/2 tsp dijon mustard
*add a pinch or two of red pepper flake for even more spice!
Directions
- In a large bowl, combine cabbage, carrots, and green onion.
- Toss cucumber with lemon juice, then add to veggie bowl.
- In a small bowl, combine olive oil, balsamic vinegar, sugar, salt, pepper, sour cream, horseradish, and dijon mustard. Use a whisk to stir all the ingredients together.
- Pour sauce into slaw mixture and stir until well combined. Cover and refrigerate for at least 2 hours before serving.
