Ingredients

  • 8 oz pasta

  • 2 Tbsp AOOC Wild Mushroom & Sage Olive Oil

  • 2 Tbsp AOOC Black Mission Fig Balsamic

  • 1 cup mixed wild mushrooms, sliced

  • 3 cloves garlic, minced

  • 1/2 cup cherry tomatoes, halved

  • 1/4 cup freshly grated Parmesan cheese

  • salt and black pepper to taste

  • fresh basil, chopped (garnish)

Directions

  • Cook the pasta according to the package instructions until al dente. Reserve a cup of pasta water before draining.
  • In a large skillet, heat Wild Mushroom and Sage Olive Oil over medium heat.
  • Add minced garlic and sliced wild mushrooms. Sauté until the mushrooms are golden brown and tender.
  • Pour in the Black Mission Fig Balsamic, stirring to combine with the mushrooms and garlic. Allow the mixture to simmer for 2-3 minutes.
  • Add the cooked pasta to the skillet, tossing to coat evenly with the flavorful mushroom and balsamic mixture. If needed, use the reserved pasta water to adjust the consistency of the sauce.
  • Toss in halved cherry tomatoes, letting them warm through. Sprinkle freshly grated Parmesan over the pasta and mix until the cheese is melted and forms a creamy coating.
  • Season the dish with salt and black pepper to taste. Stir in freshly chopped basil for a burst of freshness.
  • Plate the pasta, ensuring each serving is generously adorned with mushrooms, tomatoes, and Parmesan.
  • Drizzle a bit more Wild Mushroom and Sage Olive Oil and Black Mission Fig Balsamic on top for an extra burst of flavor.
