Pomegranate-Quince Balsamic and Cucumber Mocktail

Every once in a while we need something a little refreshing to make it though the rest of the day, or an after lunch digestif to get down an over burdening chicken sandwich. This Pomegranate Quince Mocktail is as simple as it gets, sweet, slightly sharp, and totally rejuvenating.

Ingredients per drink

  • 1 Small cucumber, halved with half diced into 1/4″ pieces and the other half for garnish
  • 4-5 Blueberries for garnish
  • 2 tsp sugar and 2 tsp Kosher salt mixed on a plate
  • 1 Tbsp AOOC Pomegranate Quince White Balsamic
  • Martini Glass

  • Sparkling water of choice

  • (Optional: A shot of gin pairs nicely with this drink but it can be left alcohol free)

Directions

  1. Rim the martini glass with cucumber to wet it, and dip into the sugar salt mixture.

  2. Place ¼ “ pieces of cucumber into the bottom of the glass, and add the Pom-Q balsamic over the top to start integrating flavor.

  3. Top with your shot and/or sparkling water.

  4. Swizzle with blueberries, garnish with remaining slices of cucumber

  5. Enjoy slowly eating the blueberries as you go!
